Lee’s Desperation
Pumpkin Pie
This
no-bake, easy to make pumpkin pie recipe is
from Betty Lee, as featured in the
cookbook ‘Edible Art’, published by Brandon
Gallery, located in Fallbrook, CA.
2 ready crust Keebler Graham Cracker pie
crusts
1 3½ ounce jello instant vanilla pudding mix
1 30-ounce can pumpkin pie mix
1 12-ounce container cool whip light
1 quart low fat or skim milk
Pour 1 cup cold milk and spoon 1 cup pumpkin
pie mix in bowl and beat until well done.
Add I package instant vanilla pudding and
beat until thoroughly blended.
Pour into Graham Cracker pie crusts and
allow to chill (15 minutes) in the
refrigerator.
Spread top of pies with cool whip after pies
set firm.
Serves 12 top 16.
