De-seeding a watermelon:
If you would like to de-seed a watermelon, here's a nice and easy way to do it. This is perfect to dice up into chunks for a snack, use in salsa, mix into drinks or anything else you would use watermelon for.

Be sure to wash your watermelon
and knives before cutting into it.

  1. Cut watermelon in half, then in quarters

  2. Cut through the flesh of the melon along the seed line with a pairing knife. Now, lift off the piece you just cut out.

  3. Using a fork, scrape the seeds from the piece you just removed and from the remaining flesh on the rind.

Storage and Handling of watermelon

  1. Handle your whole watermelon gently, to avoid internal bruising.

  2. Wash hands.

  3. Wash your watermelon in running water, rinse well and pat dry.

  4. Cut the flesh from the rind, and cut into 1-inch cubes.

  5. Place in covered container and refrigerate immediately.

  6. Keep cut watermelon refrigerated until consumed, up to 3-4 days.

Choosing and Handling Pre-Cut Watermelon

  1. The flesh of the watermelon should appear dense and firm.

  2. Refrigerate to preserve maximum freshness.

  3. Cover the cut surface of a melon with plastic wrap to prevent the flesh from becoming mushy.

  4. Store chunks of watermelon in covered plastic containers.

Watermelon Shirley TempleThis recipe was created by Chef Joe Poon for the National Watermelon Promotion Board

Ingredients:

4 shots (6 ounces) watermelon juice
4 shots (6 ounces) lemon lime soda
2 teaspoons confectioner's sugar

Instructions:

Place all ingredients in a mixer. Mix, then pour over crushed ice and strain into glass.

Servings:

Serves 2; Per serving: 186 Calories; 1g Fat (3% calories from fat); 1g Protein; 46g Carbohydrate; 0mg Cholesterol; 24mg Sodium

Frosted Watermelon

A Fun Way to Get Kids to Eat More Fruit!

Ingredients:

Seedless watermelon cut into ½- to ¾-inch thick slices
Yogurt
Granola or similar cereal

Instructions
 
Using your favorite cookie cutters cut shapes out of a ½- to ¾-inch thick slices of seedless watermelon. Or, if you prefer, use classic cut watermelon wedges. Frost with vanilla or other flavor yogurt. Sprinkle with granola.

 Ingredients

1 (8-to-10 inch round and 1-inch thick) watermelon slice, drained to remove excess moisture
1 cup strawberry preserves
1/2 cup white chocolate chips
1/2 cup raisins
1/2 cup chopped walnuts
1 cup sweetened shredded coconut

Instructions

Place the watermelon slice on a serving platter and cut into 6 wedges leaving them in the shape of a pizza. Spread the preserves over the watermelon and sprinkle the toppings over the top. Serves 6.

Watermelon Margarita

Watermelon Margarita

Ingredients:

1-1/2 ounces tequila
¾ ounce Triple Sec
¾ ounce Midori
2 ounces sour mix
6 ounces cubed, seeded watermelon
8 ounces ice

Instructions:

Blend all ingredients together; serve in a 14-ounce glass. Garnish with lime and watermelon wedge.

Watermelon Champagne Sangria - Will Dress up any Brunch or Cocktail Hour

Watermelon Champagne Sangria

Ingredients:

2 cups chopped seedless watermelon
1 seedless orange, peeled and broken into sections
2 bananas, peeled and sliced just before making the sangria
1 cup seedless grapes, cut into halves
1 bottle dry champagne of choice

Instructions:

Toss the fruit together and divide among champagne glasses. Pour the champagne over and serve.

Servings:

Makes 6 drinks.

Watermelon Yogurt Mint Smoothie

Watermelon Yogurt Mint SmoothieA Refreshing, Drinkable Breakfast or Anytime Pick-me-up

Ingredients:

1-to-2 cups seedless watermelon chunks
1 tablespoon honey
1 tablespoon fresh mint leaves or to taste
1 cup lemon yogurt
Dash cinnamon

Instructions:

Puree the watermelon, honey and mint quickly -- do not over blend. Pulse in the yogurt and cinnamon just until smooth.

Servings:

Serves 1 or 2.

 

Watermelon and Grapefruit Shooters

Watermelon and Grapefruit Shooters

½ cup water
1 4 ounce box strawberry flavored gelatin mix
1 ½ cups watermelon puree   
1 cup pink grapefruit juice
Tequila to taste (about 1 ½ cups)

Bring one half cup water to a boil.  Place the gelatin in a heatproof container with a spout and pour the water into the gelatin and stir to dissolve.  Combine the dissolved gelatin and the watermelon puree.  Divide the watermelon mixture among 12 shot glasses or small juice glasses.  Cool until thick but not set.  Top each glass with the grapefruit juice and tequila.  Makes about 12 shooters.
